Kale Ceasar Salad

If you haven’t already discovered the amazingness that is kale, it’s time to add this powerhouse green to your salad repertoire. Kale is packed with vitamins A, C, and K and minerals like manganese and copper. Plus, it’s high in fiber and low in calories. This kale caesar salad is simple to make and perfect for lunch or dinner. Add in whatever protein you want for a hearty dish! 

If you’ve struggled with preparing kale for salads and find the leaves to be too tough, the key step you may be missing is massaging the leaves. In a large bowl, add chopped kale and lemon juice. Use clean hands and massage for about 3 minutes until the leaves are soft and tender. Add in a pinch of salt, and voila! Your kale is ready to be enjoyed in whatever salad you desire.




Salad Dressing: 

  • 2 garlic cloves (minced)
  • 4 anchovies (chopped) Note: Anchovy paste will make your dressing quite fishy. 
  • 1 teaspoon Dijon mustard
  • Salt and pepper (to taste)
  • ½ cup extra-virgin olive oil
  • 2 tablespoons of lemon juice
  • 1 egg
  • 1/2 cup of Parmesan cheese (shredded) plus more for topping

  1. Coarsely chop the anchovies and mash them into a fine paste
  2. Add all salad dressing ingredients to a small mixing bowl, whisking together until combined and smooth
  3. Add salt, pepper and lemon juice to taste
  4. In a large salad bowl, combine all salad ingredients
  5. Drizzle dressing and stir to combine
  6. Top with a hearty serving of freshly grated Parmesan
