There’s something so satisfying about a crunchy and flavourful piece of bruschetta. You’ll find that this recipe is easy to follow and quick to make with just four ingredients but has a unique component not usually found in this dish. We’ve added delicious homegrown swiss rainbow chard that gives this garlicky bruschetta a colourful pop! 

Swiss chard is a slightly bitter green that can be eaten raw or cooked and is packed with good stuff like vitamin K and vitamin A. This dish shows how versatile swiss chards are, putting them front and center. You can use this recipe as a base by adding additional ingredients such as fried pancetta, pine nuts or even a drizzle of truffle oil.

INGREDIENTS

  • 3 lbs. of swiss rainbow chard
  • 3 tbsp. of extra virgin olive oil
  • 3 – 4 garlic cloves (lightly crushed)
  • Baguette (slice into 12 pieces)
  • Parmesan cheese (grated)
  • Salt and pepper (to taste)
  • Fleur de sel (to serve)

DIRECTIONS

  1. Wash swiss chard thoroughly.
  2. Thinly slice the stems and roughly chop the leaves.
  3. In a large skillet, heat oil over medium and add garlic.
  4. Let the garlic fry for about 1 minute until browned.
  5. Add the stems and sauté until tender.
  6. Add the leaves to the stalks and sauté until nicely wilted.
  7. Add salt and pepper to taste.
  8. Lightly baste sliced baguette with remaining olive oil and brown under the broiler.
  9. Top the grilled or toasted bread with the garlicky Swiss chard mixture.
  10. Add grated parmesan and fleur de sel.
  11. Serve and enjoy!
